1-1.5 kg minced meat (equal parts pork and veal). Put meat in a bowl.
Mix with 2-3 slices of stale bread soaked in water. Add a little ouzo,
an egg, chopped onions and parsley. Season with salt, black pepper or paprika,
oregano, a pinch of cinnamon, a
little garlic. Knead this mixture thoroughly.
Mould hamburgers, and wrap them with peritoneum of lamb (available from your butcher or supermarket). Press 3 wrapped hamburgers onto skewers.
